Everybody loves roast potatoes, especially when they're golden and crispy! These are great to go alongside a roast and also work well with other weekday meals such as baked fish or salads.

Ingredients

Frylight Cooking Spray

800g Maris Piper (or other floury potato) peeled and cut into chunks

1 tbsp plain flour

Salt to season

Method

  1. Bring a large pan of water to boil and parboil the potatoes for 5 minutes.
  2. Heat the oven to 200°C / 180°C fan. Spray Frylight to cover a large baking tray and put into the oven for a few minutes to heat up.
  3. Drain the potatoes into a colander and give them a shake around. Sprinkle over the flour and shake again in the colander.
  4. Put the potatoes onto the roasting tray, spray all over with Frylight, season generously with sea salt and then place in the oven for 25 minutes. Take them out, turn over gently, then return to the oven for at least another 20 minutes until golden and crispy.
