32g protein, 38g carbs, 22g fat


4 eggs

25g self raising flour

80g sweetcorn

½ grated courgette

10 sprays Frylight Coconut Oil spray

1 tsp paprika

Salt and pepper

1 tsp sriracha


  1. In a bowl, mix up 1 egg, flour, sweetcorn, courgette, paprika, salt and pepper before forming 3 equally sized balls.
  2. Spray Frylight Coconut Oil to an unheated pan. Bring to medium heat and add the fritter mixture balls, pressing down to a 3cm thickness in the pan.
  3. Cook for 5-7 minutes on a medium heat.
  4. Meanwhile, bring a saucepan of water to simmer and poach the 3 remaining eggs for 3-5 minutes before removing.
  5. Serve poached eggs on top of fritters and add sriracha to taste.
